First simple recipe CORN TORTILLAS

I love everything that has corn in it or is made out of it. Corn on the cob with butter dripping of it. Corn soup light but tasty.Corn chips are a nice change from ordinary chips and corn tortillas of course.

These are extremely easy to make.
Get nice tune to play in the back round and start cooking :







Ingredients for 24 tortillas:

5 dl corn flour
3-4 dl boiling water
Oil for frying

1. Mix the flour and water with a spoon.
2. Continue mixing the dough with your hands until it´s nice and firm.
3.Make balls out of the dough about  5 cm diameter.
4. Place one ball between two sheets of baking paper and squeeze flat either by hand or a roller.
5.Heat up a pan with oil in it. Swipe the excess oil  and take one side of the baking paper off.
6. Place the dough (baking paper side up) on the the pan until it heats up.
7. Remove the other paper and let it heat up until you see brown spots on it.

Serve these with for example a bean stew  or minced meat.

Nothing like a tasty marinara sauce with some delicious meatballs... Marinara sauce: 1 can of crushed tomatoes 4 cherry tomatoes 4 sun dried tomato slices 1 onion 2 garlic cloves olive oil spices: black pepper, salt, oregano, basil, sage Meatballs: 400 g of minced meat bread crumbs 2 eggs black pepper 1. Bombay potatoes & paprika

I would like to share you my version of these wonderful Bombay potatoes. The inspiration came from one of numerous cook books. I like to experiment and change recipes to give them a fun twist . BOMBAY POTATOES   Ingredients 4-8 small potatoes washed and peeled mustard seeds curry powder cumin seeds coriander (fresh if possible) olive oil 1. Boil the potatoes for about 10 minutes, so they get softer. 2. Heat oil in a saucepan. Add all the spices except coriander. 3. Let it simmer to really get all the delicious flavors out. 4. Add the potatoes to the saucepan and stir. PAPRIKA/ONION WITH CREAM CHEESE I personally love fresh vegetables so this is something simple yet yummy. Chorizo & chicken risotto

One of the easiest recipes for risotto. In this one I used Tescos risotto rice,but feel free  to use any brand you like. Ingredients: One chorizo sauce (peel off the skin) Two chicken breasts One onion Two garlic cloves 6-8 sundried tomatoes 1 package of double cream Risotto rice Olive oil Cayenne pepper White pepper 1. Get the rice going.Pour the rice in water and   let it boil.  I usually add a chicken stock cube as well. 2. Fry the chicken,add the onion,garlic and chorizo. 3. Spices can be added at this point plus the olive oil. 4. When everything is cooked,add the cream and stir well. Once the meats are ready,add all of it in the risotto rice. Mix well and enjoy I did a similar dish which had just chorizo and paprika in it. The image is from that dinner. 😁
