Spinach & Tomato pasta

"What a wonderful world " is a sentence in my mind as I sit in my neighborhood cafeteria and enjoy the spring sun.
Time to bring more color in cooking as well. 




Ingredients:
1 onion
2 tomatoes
a handful of  fresh spinach
a piece of fresh ginger
1 can of food cream
1-2 teaspoon of black pepper
1 teaspoon of salt
1 teaspoon of powdered ginger
olive oil
2-4 dl of pasta

1. Pour some olive oil in a pan. Heat it up, add the onion and ginger in small pieces.
2. Add all the spices and let it simmer.
3. Cut up the tomatoes and mix in with the other ingredients.
4. Boil the pasta.
5. After the mixture has sat for a while add the cream and at the end the spinach.

Meatballs with marinara sauce

Nothing like a tasty marinara sauce with some delicious meatballs... Marinara sauce: 1 can of crushed tomatoes 4 cherry tomatoes 4 sun dried tomato slices 1 onion 2 garlic cloves olive oil spices: black pepper, salt, oregano, basil, sage Meatballs: 400 g of minced meat bread crumbs 2 eggs black pepper 1. Fry the onion in olive oil until they are softer and a little brown. 2. Add garlic and some of the spices. 3. Stir in cut tomatoes. 4. Let it simmer for at least 15 minutes. 5. Add the crushed tomatoes and rest of the spices. Let it cook in low heat. 6. If needed add oil and or garlic later on ( after 30 minutes or so). Meatballs 1. Mix all the ingredients. Tzatziki Potatoes and Chicken breast

You can make anything really out of potatoes. Different varieties of these magnificent veggies make it hard to choose which one to use. Here is my short recipe with basic potatoes. Ingredients: 4 potatoes Tzatziki spice 1 tbsp of oil 2-4 pieces of chicken breast (herb marinade: garlic, oregano, a pinch of salt, rosmary, chili flakes)                         Heat up the oven to 200 C. 1. Cut the potatoes into wedges. Add the oil and mix well. 2. Pour the potatoes ona baking paper and fry in the oven for about 15-20 minutes depending on the power of you oven. 3. When the potatoes are almost done fry the marinated chicken breasts  Enjoy :)            

Bombay potatoes & paprika

I would like to share you my version of these wonderful Bombay potatoes. The inspiration came from one of numerous cook books. I like to experiment and change recipes to give them a fun twist . BOMBAY POTATOES   Ingredients 4-8 small potatoes washed and peeled mustard seeds curry powder cumin seeds coriander (fresh if possible) olive oil 1. Boil the potatoes for about 10 minutes, so they get softer. 2. Heat oil in a saucepan. Add all the spices except coriander. 3. Let it simmer to really get all the delicious flavors out. 4. Add the potatoes to the saucepan and stir. PAPRIKA/ONION WITH CREAM CHEESE I personally love fresh vegetables so this is something simple yet yummy. Ingredients Caramelized onion cream cheese (I used Philadelphia) 2 whole paprika's 1 yellow onion olive oil black pepper 1.
