Zucchini chili soup

What is the best day of the week? Also what makes it the best day? To me every day can be the best day if you decide so.
As you know I love cooking and hanging out with good friends so I invited one of my good friends over and made some food :)
Here is my take on a zucchini soup.

Ingredients
1 Zucchini
1 teaspoon salt
1 packet of food cream (thick and light combo if available)
1 teaspoon black pepper
1 teaspoon ginger
1 piece of fresh ginger
1 onion
1 whole garlic (one clove)
a dash of chili flakes
sun flower oil or other basic oil

1. Pour some oil in the pan and add the black pepper  and salt
2. Cut up the ginger, garlic and onion and add to the pan.
3. Let it simmer and cut up the zucchini in the mean time.
4. Add the cream and zucchini pieces. Lower the temperature so the cream does not burn!
Sprinkle the chili on top of the soup.

Boil the potatoes for about 10 minutes, so they get softer. 2. Heat oil in a saucepan. Add all the spices except coriander. 3. Let it simmer to really get all the delicious flavors out. 4. Add the potatoes to the saucepan and stir. PAPRIKA/ONION WITH CREAM CHEESE I personally love fresh vegetables so this is something simple yet yummy. Chorizo & chicken risotto

One of the easiest recipes for risotto. In this one I used Tescos risotto rice, but feel free  to use any brand you like. Ingredients: One chorizo sauce (peel off the skin) Two chicken breasts One onion Two garlic cloves 6-8 sundried tomatoes 1 package of double cream Risotto rice Olive oil Cayenne pepper White pepper 1. Get the rice going.Pour the rice in water and   let it boil.  I usually add a chicken stock cube as well. 2. Fry the chicken, add the onion, garlic and chorizo. 3. Spices can be added at this point plus the olive oil. 4. When everything is cooked, add the cream and stir well. Once the meats are ready, add all of it in the risotto rice. Mix well and enjoy I did a similar dish which had just chorizo and paprika in it. The image is from that dinner. 😁
