Lasagna with Zucchini

Sometimes after a class or classes my mind can be a bit blank, so going to the grocery store straight after work can be quite interesting. So there I am standing in front of the pasta shelf staring at the different options.. I lift my gaze and see lasagna noodles. YES! that´s what I´ll make. Off to the get more ingredients and then home to make a nice dinner.
 


Ingredients:

Lasagna noodles
3 cloves of garlic
1 yellow onion
1 zucchini
1 capsicum (paprika)
 handful of corn
1 package of food cream
some blue cheese
some Emmental cheese grated
spices according to your taste
  (chili, black pepper)
                                          butter or oil for the base


           Heat your oven to 200 C.

1. Cut the onions, capsicum and zucchini.
2. Spread butter in a oven pan and add the first sheets of lasagna on the bottom of it.
3. Add all the other ingredients on top (veggies aso, then a few sheets and repeat).
4. Sprinkle the emmental cheese on top of your dish and place it in the oven for 25-30 minutes.

Nothing like a tasty marinara sauce with some delicious meatballs... Marinara sauce: 1 can of crushed tomatoes 4 cherry tomatoes 4 sun dried tomato slices 1 onion 2 garlic cloves olive oil spices: black pepper, salt, oregano, basil, sage Meatballs: 400 g of minced meat bread crumbs 2 eggs black pepper 1. Bombay potatoes & paprika

I would like to share you my version of these wonderful Bombay potatoes. The inspiration came from one of numerous cook books. I like to experiment and change recipes to give them a fun twist . BOMBAY POTATOES   Ingredients 4-8 small potatoes washed and peeled mustard seeds curry powder cumin seeds coriander (fresh if possible) olive oil 1. Boil the potatoes for about 10 minutes, so they get softer. 2. Heat oil in a saucepan. Add all the spices except coriander. 3. Let it simmer to really get all the delicious flavors out. 4. Add the potatoes to the saucepan and stir. PAPRIKA/ONION WITH CREAM CHEESE I personally love fresh vegetables so this is something simple yet yummy. Chorizo & chicken risotto

One of the easiest recipes for risotto. In this one I used Tescos risotto rice,but feel free  to use any brand you like. Ingredients: One chorizo sauce (peel off the skin) Two chicken breasts One onion Two garlic cloves 6-8 sundried tomatoes 1 package of double cream Risotto rice Olive oil Cayenne pepper White pepper 1. Get the rice going.Pour the rice in water and   let it boil.  I usually add a chicken stock cube as well. 2. Fry the chicken,add the onion,garlic and chorizo. 3. Spices can be added at this point plus the olive oil. 4. When everything is cooked,add the cream and stir well. Once the meats are ready,add all of it in the risotto rice. Mix well and enjoy I did a similar dish which had just chorizo and paprika in it. The image is from that dinner. 😁
