Chorizo & chicken risotto

One of the easiest recipes for risotto. In this one I used Tescos risotto rice,but feel free  to use any brand you like. Ingredients: One chorizo sauce (peel off the skin) Two chicken breasts One onion Two garlic cloves 6-8 sundried tomatoes 1 package of double cream Risotto rice Olive oil Cayenne pepper White pepper 1. Get the rice going.Pour the rice in water and   let it boil.  I usually add a chicken stock cube as well. 2. Fry the chicken,add the onion,garlic and chorizo. 3. Spices can be added at this point plus the olive oil. 4. When everything is cooked,add the cream and stir well. Once the meats are ready,add all of it in the risotto rice. Mix well and enjoy I did a similar dish which had just chorizo and paprika in it. The image is from that dinner. 😁

Mushroom Risotto

I have a friend who recommended the use of a food cream that consists of  mushroom and fried onion. I decided to try it in this risotto recipe and if you enjoy the taste of mushrooms feel free to try this. Ingredients: 2 dl risotto rice 1 vegetable stock cube 1 onion 1 whole one clove garlic 1 teaspoon of black pepper 1 can of mushroom (or a hand full of fresh ones). 2 tablespoons of butter 1 table spoon of white wine tomatoes for decoration 1. Put the stock cube in a pan and add enough water to let it dissolve. 2. Add more water and let it boil. Pour in the rice, butter and black pepper. 3. Let it simmer until the water has absorbed. 4. Cut up the onions and mushrooms and pour in the risotto. 5. You can add the white wine in to add some flavor to the dish. 6. The last stage is to add the flavored cream.

Cashew nuts and carrot rice

Was thinking about a nice light dish that would still fill me up and had some color in it. Nuts are such a great source of protein and in you can use them in so many brilliant ways. here is one way to use them in a starter dish or even as a main course.                                                             stock photo :) Ingredients: 250 g basmati rice 250 g of grated carrots 50 g of cashew nuts 1 onion 1 tsp coriander 1 tsp cumin seeds 1 tsp tumeric  1 tsp sea salt 1. cook the onion in a sauce pan until soft. 2. Add all the spices except salt. 3. Add the grated carrot stir. 4. Pour in the rice and 500 ml of water and salt. 5. Let it simmer for 15 min on low heat. 6.
